SEM-IE Margaret River Pet Nat Semillon

Semillon sourced from Wilyabrup and harvested early to retain natural acidity. The fruit was pressed to stainless and fermented with combination of Pichia kluyveri and Saccharomyces cerevisiae yeasts. The wine was fermented dry and racked off heavy lees before it was re-inoculated using Cabernet juice when it was being processed during April. Once ferment had recommenced, the wine was hand bottled with approx. 11g/L RS.

“Golden coloured, light, tonic water style fizz. A touch of tonic water to taste, concentrated lemon/lime too, some green and dried apple, a bit of cucumber and green herb. Neat saline minerally vein in the wine too. Has some good chalkiness around the crisp texture. Delicious, and a good example of accessible pet nat style.”
