2021 Chardonnay

100% Gin Gin clone Chardonnay, grown in Wilyabrup. Fermented wild in new and seasoned French oak, with all barrels going through malolactic fermentation. This wine was aged on lees for 9 months with fortnightly batonnage, before being bottled unfined and unfiltered.

White stone fruit, grapefruit pith, salty lime zest…margarita? The palate has a fruit forward richness, that is framed beautifully by textural acidity.
